I wanted to share another meal I threw together with left overs. Brennan cooked me an amazing meal on Friday night and I wanted to take advantage of his left overs (uncooked). I opened the fridge and grabbed the raw brussels, uncooked bacon, baby carrots, onion and 3 portobellos. All items were either from his dinner he cooked on Friday or my salad ingredients from the previous week.
Pre-heat the oven to 400 degrees.
I threw two pieces of bacon in a skillet on medium and cooked for 10 minutes (flipping a few times) as I prepared the vegetables. I chopped the portobellos and onion and added them to a glass casserole dish with about 8 brussels and a hand
full of carrots. I pull some of the leaves off the brussels because I like how crispy they get. I drizzled them with extra virgin olive oil and sprinkled with sea salt and pepper. I stirred and let it sit while I chopped up the bacon. I added the bacon. For a little extra flavor I added a tiny bit of bacon grease and stirred the mixture.
I baked the mixture in the oven for 35 minutes stirring and adding salt, pepper and pinches of garlic to taste every 10 minutes.
